INGREDIENTS 1 cup beets, shredded 1 cup raw walnuts, soaked (overnight) 1 Tbsp olive oil 1 Tbsp Braggs juice of 1/2 a lemon 2 garlic cloves 1 tsp cumin 1/2 tsp Himalayan salt 1/4 tsp cayenne pepper DIRECTIONS Add shredded beets and soaked walnuts to food processor and combine until "coarse" smooth (like a not-so smooth hummus) Add all other ingredients and puree until smooth Place in fridge until cooled Serve chilled with veggies or crackers Can also be used as a spread in a wrap
