Chicken & Asparagus Spaghetti Squash Casserole

INGREDIENTS 1 small spaghetti squash, cooked and "stranded" 1 red onion, chopped 1 bunch asparagus, chopped 1 cup chicken, cooked and chopped 4 eggs, lightly beaten 1/2 tsp Himalayan salt coconut oil 1/2 2+ year aged cheddar (OPTIONAL)   DIRECTIONS Preheat oven to 350 and generously grease an 8x8 casserole dish with coconut oil In a large pan, over medium heat, saute onions in coconut oil until they start to caramelize (brown) Add in asparagus, turn to low and cover until asparagus is soft (about 5 minutes) In a large bowl mix together spaghetti squash strands, eggs, chicken, onion/asparagus mixture and salt Pour into prepared pan and top…
